I'm a local from Taos and I love attending the Secret Suppers by Chris and Val. Every time without fail the food, wine, company and locations are fabulous. Chris and Val are the most courteous hosts and take the time always to welcome everyone individually.
I tell everyone visiting to go to a Secret Supper. It is an experience that you'll never forget.

Wow. Wow. Wow. What a treat. We traveled with friends last weekend for a brief stay in Taos. At the last minute, one of my friends was looking for fun things to do in the area and found this jewel. Val and Chris were easy to contact and moved their schedule around to accommodate us. The cooking class is in their home, which made the experience even better. With our choice of music (Spanish guitar), flow freeing wine, and a great teacher, the experience was one of a kind. We started with a general discussion to get to know the instructor, Chris (very interesting and accomplished) and to get to know the recipes (we chose New Mexican cuisine). I have had several cooking classes and found this "pre-game" very helpful. Once the cooking started, Chris was very helpful and encouraging. He made the evening enjoyable. It didn't hurt that his home is set in a beautiful location. The kitchen has a great view and we stepped outside to watch a beautiful sunset. Once we were done, we all sat down to dinner with the family and had a great time. I have never had such an enjoyable cooking class. I'm not sure I would call it a "class," it is more like a cooking experience. Thank you Chris and Val!

I've been visiting Taos for 37 years and looked for something 'new' to do. I found CST online, emailed with Valerie Maher several times and called to register for a class this past Sunday, Oct. 15th, and it was all and more than I imagined. I was one of 10 guests (7 of us from Texas), and we did a Northern Italian class with Chef Chris. The class was the most fun I've had in good while, and it lasted longer than the scheduled four hours for us to make introductions, prepare numerous dishes and sit down and eat with good music and plenty of wine. The class is definitely hands on, and you cannot be timid. The written instructions do not provide every little detail; however, Chef will redirect you when needed. I tried to brown too many meatballs at once and had to remove some and limit myself to 3-4 at a time. All 10 of us had specific recipes to prepare and it was great entertainment as well. Needless to say, the end result was fabulous and enjoyed in the beauty of Arroyo Seco, half way between Taos and the ski valley. I learned about the Secret Suppers as well - pop-up restaurant - they do monthly. You can read about them on the website. I have not stopped telling people both in NM and at home in Dallas about my experience. I also feel that Valerie and Chris are new friends, whom I certainly plan to see again - either in New Mexico or Dallas.

My wife and I were celebrating our 31st wedding anniversary. It was to be a surprise for my wife. She is hard to surprise as she goes through a 20 question routine. i pulled it off. I wanted Italian with a bit of a Mediterranean flair. Chris pulled it off. On the positive side, the shrimp appetizer was outstanding and my wife had fun preparing that dish. I had a great time learning how to prepare Risotto.
The beef prepared in their outside oven was amazing.
One part puzzled me and once I got use to it, it was very OK. You see the whole affair occurred in their home. Not a professional kitchen attached to their home, but their kitchen. Complete with 3 dogs, 2 cats and their son (who was a delight) running around. Boots, laundry... "stuff" everywhere completed the at home experience. Frankly that translated very well to me. What I learn needs to be transferable to home.
The one thing that could have made the experience more enjoyable would have been to have Chris's wife around more. If this is a home experience, why not have her around. When we arrived we had about a 1 hour getting to know you sort of chat without her. Valarie was not around and I wish she had been. As a couple and interacting with couples, that would have been better. I also think that a questionnaire sent out ahead of time identifying what we wanted to achieve out of this event, what some of out likes and dislikes were. A bit about us to stimulate conversation would have been good. While learning a bit about Chris and his back ground was good, I would have liked to hear more about his cooking and techniques and less about his "acting" past. That was interesting but I would have liked to know more about him and his love for food more....and maybe how he met his wife, etc, etc. The conversation grew a bit stilted after about 1 hour since Valarie was not there. Other than that, the food was great, the conversation was great and the "with family" environment was delightful. I learned beaucoup (much) and would highly recommend doing this in Taos.
One more thing, better signage to their place, especially if it is late.
Again, I would highly recommend this and I wish I could get folks together for them to teach here in El Paso.

Larry - we had such a good time meeting you and your wife! It was the final day of our week long Kids Culinary Camp, so was a bit of a stretch to get everything back 'in order' so to speak - in that hour between the 16 kids leaving and you all arriving! Was a little crazy but we enjoyed it so much! I would have loved to have visited with you all more too - I hope you'll come back and see us again soon, Valerie

I planned an anniversary afternoon learning New Mexico's cuisine with my bride of 35 years at CST. I had booked the class about 18 days prior, but when I called for directions in route from the immediate vicinity beginning an hour before arrival, 3 of the 4 calls went to voice mail, and on the 4th a child answered and said his dad would call back shortly. No call back. 4 hours after my first call, Valerie calls and leaves a text saying the class had been canceled 2 weeks prior. Said she sent an email, but a search revealed no such email in any folder of mine. Montana to Taos is 770 miles so I regard an "I apologize for the inconvenience" woefully inadequate. All in all communication with CST is difficult and spotty, no matter how hard an individual tries. Maybe CST is a worthwhile effort, but for me, trying to surprise my wife, it was a miserable disappointment. We drove up to Taos Ski Valley and had a nice hike to Williams Lake in glorious fall weather--something I'd recommend instead. Checking CST's online class schedule upon our return to Taos revealed that todays class remained as an offering on their website. The Chef and Valerie can make this up to us, though, if they choose--come up to Montana and you can teach this class to us and a few of our friends in my kitchen. I hope it's not an inconvenience.

The cooking schools are great, Chris and Valarie do a SUPER job of entertaining you and engaging you in preparing a delicious meal which you get to share with new friends in their beautiful home. We particularly enjoy the monthly Secret Suppers which include a five course meal served in a different unique location each month, sometimes someones luxury home or a historical site or gallery, a great chance to experience Chris's gourment cooking and new recipes while enjoying a glass of wine and good conversation with interesting people from all over the country.

Visiting Taos can be like visiting another planet- one we'd quickly all like to move to and live on. One of its surprising charms is the Cooking School of Taos. It is a home, and an entertainment, an adobe that soon fills with the smell of great food, already has lovely art, and even looking out the back windows has stunning mountain views. Chris Maher is a master Chef, a raconteur, and a warm and welcoming host. His wife Valerie Maher with grace and smiles keeps this lovely clock wound. There is something about Maher’s engaging warmth, the snug and beautiful house, and Chris’s gift for teaching that ropes in a bunch of people who have never met to quickly cooperate and cook together, to laugh and taste and learn. I cook well. I have never before taken a cooking class. It never occurred to me that I would enjoy taking one. I loved this personable, tasty, friendly, and educational afternoon. I learned surprising and useful things. No spoiler here; sorry, you’ll have to take a class to learn them, too.

As other reviewers have mentioned, not only is this a cooking school, but it is an experience! My wife and I participated several years ago during a visit to Taos and we were not disappointed. i decided to retire in the Taos area and looked forward to experiencing this again. Our session this time was Southwestern cuisine. The menu consisted of Corn Chowder, Chicken Tacos, Carne Asada, Grilled Broccoli and peppers with Chipotle lime drizzle, Grilled lettuce salad, Horchata, and more.
We had a group of 12 and after an interesting and entertaining discussion about Southwestern cuisine and the menu with Chris, we split into two groups to prepare the dinner. Since our last visit, Chris and Valerie have built an amazing outside open air kitchen, and I was fortunate enough to experience working in the new kitchen with marvelous breathtaking views of the mountains and valleys and being able to breathe the cool mountain air. That alone was worth it! The other groups worked in the inside kitchen and even picked the fresh broccoli and cilantro from the garden.
Chris worked with each group and "instructed" us in every aspect of preparation, cooking, spicing, etc. We had a great time discussing cooking, and even more fun discussing "life". Chris has done a lot in his life and it was enjoyable to relate to his experiences.
We had ample wine to drink, red and white, and hors d'oeuvres to sample on while we cooked. Our group was great to get to meet and interact with, and by the time we sat down to eat, we were all good friends. The session was supposed to be over at 5PM, but we were all having such a great time eating, laughing, and talking that we left around 7:30PM.
First off, Taos is a great destination to visit. There is so much to do year round, and the culture is so diverse and eclectic. You can definitely find something in Taos that "floats your boat". Cooking Studio Taos has to be at the top of your list when you visit Taos! It is well worth the price - the meal alone is worth it and the experience is the icing on the cake. You will not be disappointed!!!

We ate a lot of good food in Taos, but the best meal we had was the one we made ourselves! We attended the Cuban Cooking class at the Cooking Studio Taos on a warm Saturday afternoon. As students arrived to the home of Chris and Valerie, we were greeted with refreshing iced tea and a recipe book. On the back patio, under the shade of a Willow tree, we reviewed our Cuban recipes and chatted about our experiences and backgrounds, as well as the importance of Organic and local foods.
Next, we headed inside to the kitchen, eager to start cooking! Chris showed us how to hold a chef's knife and the chopping began. Chris' confidence rubbed off on us, and although there were some mistakes, we handled them in stride. After all, "cooking is an art." ....The confidence could have also been from the fresh-squeezed lime and mint Mojitos, hard to say! Our group of 6 laughed a lot and enjoyed each other's company and cooperation as we divided the work and navigated through our recipes. Finally, we finished preparing our Cuban meal. I wish I had taken pictures of the plated dishes, but I would have had to be VERY FAST. The food smelled so good, no one could wait. We loaded our plates up and headed to the backyard to enjoy the delicious meal we had prepared.
Overall, the experience was one we wont forget! This was definitely the best part of our trip to Taos. I loved the opportunity to put an apron on and make some memories
